BLT Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes
  • 6 bacon slices
  • 1 tbsp vegetable oil
  • 1/3 cup mayo
  • Salt and pepper
  • Lettuce pieces
  • Jarred sun-dried tomato bruschetta topping

Directions

  1. Microwave sweet potatoes until just softened, 6-7 minutes. Let cool slightly, then trim off the ends and slices into 1/2-inch thick rounds.

  2. Cook bacon in vegetable oil in a large skillet over medium heat until crisp, about 12 minutes; drain on paper towels and break into pieces. Combine 1 tbsp bacon drippings with mayo; season with salt and pepper. Cook the sweet potato rounds in the remaining drippings, turning, until crisp, 15 to 20 minutes. Drain on paper towels and season with salt.

  3. p each sweet potato round with some of the mayo, a small piece of lettuce, more mayo, tomato bruschetta topping and the bacon. Makes 18-24.
