Fig and Blue Cheese Bruschetta

Ingredients

  • 1/4 cup olive oil
  • 1/2 baguette, sliced 1/2 inch thick
  • 2 tbsp fig jam or preserves
  • 4 oz. blue cheese, crumbled
  • Small fresh basil leaves, for garnish

Directions

  1. Heat 2 tbsp olive oil in a large nonstick skillet over medium heat. Add half the baguette slices and toast until golden and crisp, about 4 minutes per side. Repeat with the remaining 2 tbsp olive oil and baguette slices. Allow to cool.

  2. Spread each piece of bread with a little fig jam or preserves. Top with the blue cheese and garnish with basil.
