Dijon Roasted Potatoes

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp Dijon
  • 1 garlic clove, minced
  • 1/2 tsp chopped fresh thyme
  • 1/2 tsp chopped fresh rosemary
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lb. tiny new red, yellow, and purple potato mixture; or quartered baby potatoes
  • Flaky sea salt

Directions

  1. Preheat oven to 375. Coat a 10×15-inch baking pan with nonstick cooking spray.

  2. Stir together oil, mustard, garlic, thyme, rosemary, salt and pepper in a large bowl. Add potatoes and toss to coat. Transfer potatoes to prepared pan.

  3. Roast, turning once, until golden brown and fork-tender, about 35 minutes. To serve, sprinkle with sea salt.
