Ingredients

  • 1 1/4 cups flour
  • 1 tsp salt
  • 1/2 cup shortening, chilled and diced
  • 3 tbsp ice water
  • 2 tsp plus 1/3 cup butter
  • 1 1/2 cups chopped pecans
  • 3 eggs, lightly beaten
  • 1 cup pure maple syrup
  • 1 tsp vanilla extract

Directions

  1. Stir together flour and 1/2 tsp salt in a bowl. Using a pastry blender or 2 knives, cut in half of shortening until fine crumbs form. Cut in remaining shortening until coarse crumbs form. Add water, 1 tbsp at a time, tossing with a fork until a dough forms. Shape dough into a disk and wrap in plastic wrap; chill 30 minutes.

  3. Roll dough into an 11-inch circle on a floured surface. Transfer dough to a 9-inch pie plate. Trim edges.

  4. Melt 2 tsp butter in a large skillet over low heat. Add pecans; cook, stirring, until nuts begin to color, 5 to 8 minutes. Let cool 10 minutes.

  5. Meanwhile, microwave 1/3 cup butter in a large bowl until melted. Stir in eggs, maple syrup, vanilla, and remaining 1/2 tsp salt. Stir in pecans, then pour into crust.

  6. Bake until filling is set and puffed, 45-50 minutes. Transfer to a wire rack to cool. Serve with ice cream.
