Albondigas

Ingredients

  • 4 cups water
  • 3 large carrots, sliced
  • 1 potato, peeled and diced
  • 1 onion, diced
  • 1 1/2 cups hot salsa
  • 2 beef bouillon cubes
  • 1 1/2 lb. ground beef
  • 1/3 cup seasoned dried breadcrumbs
  • 1/3 cup milk
  • Chopped fresh cilantro and lime wedges

Directions

  1. Bring water, carrots, potato, onion, salsa and bouillon cubes to a boil in a large pot. Reduce to a medium simmer. Cook, stirring occasionally, about 10 minutes.

  2. Meanwhile, mix together beef, breadcrumbs, and milk in a bowl. Shape into 1-inch meatballs.

  3. Drop meatballs into simmering broth. Return soup to a simmer, then reduce heat to medium low. Cover and cook until meatballs are no longer pink in center and vegetables are tender, about 20 minutes. Ladle into bowls and top with cilantro and a squeeze of lime.
