Bresaola Purses

Ingredients

  • 1/4 cup olive oil
  • 4 tsp white wine vinegar
  • 1/4 tsp kosher salt
  • Black pepper
  • 1/2 English cucumber, peeled, seeded and cut into 1" matchsticks
  • 2 scallions, white and green parts, trimmed and finely chopped
  • 2 cups baby arugula
  • 12 slices bresaola

Directions

  1. Whisk together the olive oil, vinegar, salt and plenty of pepper in a medium bowl. Add the cucumber, scallions and arugula and toss to coat evenly. Put a pinch of the salad mixture in the middle of each slice of bresaola. Gather up both ends of the bresaola around the salad and secure with a toothpick. Arrange on a small tray and serve.
