Tomato-Cucumber Salad

Ingredients

  • Dressing:
  • 1 large garlic clove, smashed and very finely chopped
  • 1 small shallot, very finely chopped
  • 1 tsp Dijon
  • 1 tbsp red wine vinegar
  • 1 tsp balsamic vinegar
  • 1/2 tsp dried oregano
  • Black pepper
  • 1/2 tsp kosher salt
  • 3 tbsp olive oil
  • 1 tbsp lemon olive oil
  • 1 tbsp finely chopped basil
  • Salad:
  • 1 seedless cucumber, peeled, and cut into chunks
  • 6 plum tomatoes, seeded and cut into chunks
  • 1/2 very small red onion, cut into thin slices lengthwise
  • 1 cup crumbled Greek feta

Directions

  1. Chill salad plates.

  2. To make the dressing: Whisk together the garlic, shallot, Dijon, red wine vinegar, balsamic vinegar, oregano, salt, pepper and both olive oils until smooth. Stir in the basil.

  3. To make the salad: Combine the cucumber, tomatoes, red onion, and feta in a large, chilled bowl. Add the dressing and toss thoroughly. Arrange on the chilled plates and serve.
