Sumatran Beef Ragout

Ingredients

  • Peanut oil, as needed
  • 3 lb. stewing beef, cut into 1 1/2 inch cubes
  • 4 to 5 cups diced onions
  • 3 tbsp grated fresh ginger
  • 2 tbsp finely minced garlic
  • 1 tsp finely minced fresh jalapeno, or to taste
  • 1 tsp ground turmeric
  • 2 tbsp ground coriander
  • 2 bay leaves
  • 2 long strips lemon zest
  • 3 cups coconut milk
  • 2 cups beef stock
  • Salt and black pepper

Directions

  1. Place a frying pan over high heat and pour in enough oil to form a film on the bottom. Working in batches, add the beef and fry over high heat until browned on all sides, 10 to 15 minutes. Set aside.

  2. Warm 3 tbsp oil in a large, heavy pot over medium heat. Add the onions and cook until tender and translucent, 10 to 15 minutes. Add the ginger, garlic, jalapeno, turmeric, coriander, bay leaves and lemon zest and cook for 5 minutes longer.

  3. Add the beef to the pot, along with the coconut milk and stock. Bring to a simmer, cover and cook until the meat is very tender, about 3 hours.

  4. Season to taste with salt and pepper.
