Eggnog Mini Loaves

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 large eggs, room temp
  • 1 cup eggnog
  • 3/4 cup sugar
  • 1/2 cup butter, melted
  • 2 tsp vanilla extract
  • 2 tsp rum extract

Directions

  1. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl, beat the eggs, eggnog, sugar, butter and extracts; stir into dry ingredients just until moistened.

  2. Pour into 3 greased loaf pans. Bake at 350 until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool for 10 minutes before removing from pans to wire racks.
