Ingredients

  • Pizza Dough:
  • 1 3/4 cups all-purpose flour, plus extra for dusting
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 tbsp olive oil, plus extra for oiling
  • 6 tbsp lukewarm water
  • Topping:
  • 6 tomatoes, thinly sliced
  • 6 oz. mozzarella, drained and thinly sliced
  • 2 tbsp shredded fresh basil
  • 2 tbsp olive oil
  • Salt and pepper

Directions

  1. To make the pizza dough, sift the flour and salt into a bowl and stir in the yeast. Make a well in the center and pour in the oil and water.

  2. Gradually incorporate the dry ingredients into the liquid, using floured hands. Turn out the dough onto a lightly floured surface and knead for 5 minutes, until smooth and elastic.

  3. Return the dough to a clean bowl, cover with lightly oiled plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size.

  4. eheat the oven to 450. Lightly oil a baking sheet.

  5. Turn out the dough onto a lightly floured surface and punch down. Knead briefly, then roll out into a round about 1/4 inch thick.

  6. Transfer to the prepared baking sheet and push up the edges with your fingers to form a small rim.

  7. For the topping, arrange the tomato and mozzarella slices over the pizza crust.

  8. Season with salt and pepper to taste, sprinkle with the basil, and drizzle with the oil. Bake in the preheated oven for 20 to 25 minutes, until golden brown.

  9. Cut into slices and serve immediately.
