Grilled Steak with Tomatoes and Garlic

Ingredients

  • 3 tbsp olive oil, plus extra for brushing
  • 1 lb. tomatoes, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 red onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 tbsp chopped fresh flat-leaf parsley
  • 1 tsp dried oregano
  • 1 tsp sugar
  • 4 sirloin steaks
  • Salt and pepper

Directions

  1. Place the oil, tomatoes, red bell pepper, onion, garlic, parsley, oregano and sugar in a saucepan and season with salt and pepper to taste. Bring to a boil, reduce the heat, and simmer for 15 minutes.

  2. Meanwhile, snip any fat around the outsides of the steaks. Season each generously with pepper and brush with oil.

  3. Heat a ridged grill pan until hot.

  4. Add the steak to the pan and cook according to taste: 2 to 2 1/2 minutes per side for rare.

  5. Transfer the steaks to warmed plates and serve with the tomato and garlic sauce.
