Deep-Fried Vegetables with Balsamic Dip

Ingredients

  • 2 lbs. mixed veggies, such as zucchini, broccoli, cauliflower, onions and carrots
  • 1 1/2 cups all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup beer
  • Olive or vegetable oil, for deep-frying
  • Salt and pepper
  • Dip:
  • 6 tbsp balsamic vinegar
  • 1 tsp mild mustard
  • 1 tsp clear honey

Directions

  1. Prepare the veggies and cut into even chunks.

  2. Sift the flour into a bowl with salt and pepper to taste. Make a well in the center and add the eggs and beer.

  3. Stir to mix, then whisk hard to make a smooth, bubbly batter.

  4. at enough oil for deep-frying in a large saucepan or deep-fat fryer to 350-375. Dip the veggies in the batter to coat lightly and fry, in batches, until golden brown.

  5. Drain the veggies on paper towels and keep warm while frying the next batch.

  6. Meanwhile, for the dip, mix together the vinegar, mustard and honey until smooth.

  7. Serve the veggies hot with the dip on the side.
