Peach Coffee Cake

Ingredients

  • 4 cups frozen, sliced peaches
  • 2 Tbsp all purpose flour
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/2 tsp salt
  • 2 cups all purpose flour

Directions

  1. Preheat oven to 350F. rack in the middle position.

  2. Place peaches in a ziploc plastic bag.

  3. Add 2 tbsp flour, seal and shake until coated.

  4. Set aside on counter.

  5. Grease 9×13 inch cake pan.

  6. Arrange peaches in bottom of the cake pan.

  7. In medium bowl, whisk 3 eggs and vegetable oil.

  8. Add sugar and mix until thoroughly blended.

  9. Add in vanilla, baking soda, cinnamon, cardamom, and salt.

  10. Add flour slowly in 1/2 cup increments. Mixing after each addition.

  11. Scrape down bowl and give a final stir.

  12. Pour batter over peaches in little pools.

  13. Bake at 350F for 50-60 minutes.

  14. Cool cake in the pan on stovetop.

  15. When cool frost with Cream Cheese Frosting
