Spicy Italian Sausage-Stuffed Mushrooms

Ingredients

  • 1 lb. spicy Italian sausage
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced onion
  • 1/2 cup minced celery
  • 3 garlic cloves, minced
  • 1/2 cup shredded mozzarella
  • 1/2 cup breadcrumbs
  • 1/4 cup half and half
  • 1/4 tsp kosher salt
  • 1/4 tsp dried oregano
  • 1/4 tsp black pepper
  • 12 portobello mushroom caps, gills removed
  • 1/2 cup grated Parmesan

Directions

  1. eheat air fryer to 400.

  2. Shape sausage into 1-inch balls. Working in batches, place sausage balls in air fryer basket in a single layer. Spray with cooking spray. Set temp to 400, and cook for 4 minutes. Let drain on paper towels. Repeat with remaining sausage.

  3. Spray a small skillet with cooking spray and heat over medium heat. Add bell pepper, onion, celery and garlic; cook, stirring occasionally, until tender, 3-5 minutes.

  4. In the work bowl of a food processor, pulse together cooked sausage, cooked veggies, mozzarella, bread crumbs, half and half, salt, oregano, and black pepper until mixture is coarsely chopped and well combined.

  5. Divide sausage mixture among mushroom caps. Spray sausage mixture with cooking spray and sprinkle with Parmesan.

  6. Working in batches, cook mushrooms in air fryer basket at 400 for 10 minutes. Serve warm.
