Skillet Red Potatoes

Ingredients

  • 2 tbsp unsalted butter
  • 3 tbsp olive oil
  • 2 lbs. small red potatoes, halved
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Directions

  1. In a large cast-iron skillet, melt butter with oil over medium heat. Remove from heat.

  2. Arrange potatoes, cut side down, in an even layer in skillet. Cook over medium heat until bottoms of potatoes are browned and crispy, 8 to 10 minutes. Turn potatoes; cover and cook until golden brown and crisp, 5 to 8 minutes. Turn potatoes; cover and cook until tender, 5 to 8 minutes. Sprinkle with salt and pepper.
