Fish Goujons with Garlic Mayo

Ingredients

  • 6 tbsp mayo
  • 2 garlic cloves, crushed
  • 2 large whitefish fillets, skinned
  • 1 egg, beaten
  • 3 tbsp whole wheat flour
  • Vegetable oil, for deep-frying
  • Lemon wedges, to garnish

Directions

  1. Combine the mayo and garlic in a small dish. Cover with plastic wrap and refrigerate while you cook the fish.

  2. Cut the fish into 1-inch strips. Dip the strips in the egg, then drain and dredge in flour. Meanwhile, heat the oil in a deep-fryer or large saucepan to 350-375 or until a cube of bread browns in 30 seconds.

  3. Fry the pieces of fish in the hot oil for 3 to 4 minutes, or until golden brown. Remove from the oil and drain on a dish lined with paper towels.

  4. Remove the garlic mayo from the fridge and stir once. Serve the fish on an attractive dish, garnished with lemon wedges, with the mayo on the side for dipping.
