Indian Pudding

Ingredients

  • 2 cups milk
  • 1/4 cups sugar
  • 1/2 tsp ginger
  • 1/8 tsp baking soda
  • 1/4 cup dark molasses
  • 1/4 cup cornmeal
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup milk

Directions

  1. eheat oven to 275. In saucepan on top of double boiler, cook milk over low heat until hot. Add cornmeal a little at a time, stirring constantly. Cook 15 minutes or until mixture thickens. Remove from heat. Mix together in a small bowl sugar, salt ginger, cinnamon and baking soda. Stir into cornmeal mixture. Add the milk and molasses and blend thoroughly. Pour mixture into a 1 quart casserole dish and bake for 2 hours. Serve warm with whipped cream and a sprinkle of nutmeg or with ice cream.
