Carrot Cake

Ingredients

  • 1 1/2 veg oil
  • 2 cups sugar
  • 4 eggs, beaten
  • 2 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 3 cups grated carrots
  • Icing: 1 (8 oz) pkg cream cheese
  • 1/2 cup margarine
  • 1/2 to 1 box conf. sugar
  • 1 cup chopped nuts
  • 2 tsp vanilla

Directions

  1. Mix oil and sugar, add eggs. Mix well. Add dry ingredients; add carrots. Mix well; Bake 350 degrees. Bundt pan- 45-60 minutes; 8" pan 25-30 minutes;
