Pork Chops with Fresh Tomato, Onion, Garlic and Feta

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, halved and thinly sliced
  • 4 bone-in pork chops
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 2 cups halved multicolor grape tomatoes
  • 3 garlic cloves, minced
  • 1 tbsp dried basil or 1/4 cup fresh chopped basil
  • 2 1/2 tsp balsamic vinegar
  • 4 oz. feta, crumbled

Directions

  1. Heat 1 tbsp oil in a 12-inch skillet over medium-high heat. Add onion; cook, stirring, until golden brown, about 5 minutes. Transfer to a plate.

  2. Heat remaining 1 tbsp oil in skillet. Sprinkle chops with 1/2 tsp salt, 1/4 tsp pepper and the garlic powder; transfer to skillet. Cook 7 minutes per side, or until cooked through. Transfer to a plate and cover loosely with foil. (Do not drain skillet).

  3. Return onion to skillet; stir in tomatoes, garlic and basil. Cook, stirring, until tomatoes are softened, about 1 minute. Stir in balsamic vinegar and remaining 1/4 tsp each salt and pepper, scraping up any browned bits from pan. Serve over chops and sprinkle with feta.
