Marinated Steaks

Ingredients

  • For the Marinade:
  • 1/2 cup soy sauce
  • 1/2 cup olive oil
  • Finely grated zest of 1 lemon
  • 6 tbsp fresh lemon juice
  • 1/3 cup Worcestershire
  • 1/4 cup finely chopped fresh basil
  • 2 tbsp finely minced garlic
  • 2 tbsp dried parsley or chopped fresh parsley
  • 1 tbsp Dijon
  • 2 tsp red pepper flakes
  • 1 tsp ground white pepper
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 1 tsp dried minced garlic
  • 4 bone-in rib-eye steaks

Directions

  1. Make the marinade: In a dish large enough to hold the steaks, combine all of the marinade ingredients.

  2. Place the steaks in the marinade, turn to coat, and refrigerate for at least 4 hours and up to 24 hours.

  3. Remove the steaks from the marinade and pat them dry with paper towels. (Reserve the marinade for a quickie steak sauce.)

  4. Heat a grill over medium-high heat until smoking hot. Add the steaks and grill without moving for 2 minutes, then turn them 90 degrees to get those fancy hatch marks. Cook for another 2 to 3 minutes, until the steak is really nicely browned, and flip. Cook 4 minutes longer for medium-rare, or to your liking.

  5. Remove from the grill and let rest on a platter for 4 minutes. Serve.
