Red Robin Southwest Salad

Ingredients

  • 1 1/2 lbs. chicken breasts
  • 3 tsp chili powder
  • 1 cup chicken broth
  • 1/4 tsp dried oregano
  • 1 tsp each of ground cumin, pepper and seasoned salt
  • 1/4 tsp red pepper flakes, crushed
  • 9 cups torn romaine
  • 1/2 tsp each of ground chipotle pepper, white pepper and paprika
  • Toppings:
  • Sliced avocado
  • Chopped tomato
  • Shredded cheddar
  • Ranch dressing
  • Sliced green onions

Directions

  1. Mix the entire seasonings together in a medium sized bowl. Rub the mixture over the chicken, ensuring it’s completely coated. Place in a slow cooker. Add broth. Cover and cook on LOW until the meat is tender, 3 to 4 hours.

  2. Remove the chicken, let cool slightly. Shred with two forks. Serve over romaine, top with your favorite toppings and enjoy.
