Italian Meatballs

Ingredients

  • 3 large eggs, lightly beaten
  • 1 cup finely chopped onion
  • 3/4 cup panko
  • 3/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan
  • 3 garlic cloves, minced
  • 1 tbsp Italian seasoning
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 1/2 lbs. ground beef
  • 1 1/2 lbs. ground pork

Directions

  1. sition racks in upper and lower thirds of oven; preheat to 450. Line 2 large rimmed baking sheets with foil and coat with cooking spray.

  2. Combine eggs, onion, panko, parsley, Parmesan, garlic, Italian seasoning, salt and pepper in a large bowl. Add beef and pork. Mix gently with your hands until just combined (do not overmix). Using a generous 2 tbsp each, shape into 48 meatballs. Place 1 inch apart on the prepared baking sheets.

  3. Bake the meatballs until cooked through, about 15 minutes.
