Meatball Pesto and Gnocchi Bake

Ingredients

  • 1 lb. gnocchi
  • 1 tbsp olive oil
  • 18 Italian Meatballs (see recipe)
  • 1/3 cup pesto
  • 1/3 cup ricotta
  • 1/3 cup water
  • 1/4 cup grated Parmesan
  • 3 tbsp breadcrumbs

Directions

  1. Cook gnocchi in olive oil in a large broiler-safe skillet over medium heat until starting to brown, about 5 minutes. Add meatballs and pesto, ricotta and water; stir until well coated. Spread the mixture into an even layer and top with Parmesan and breadcrumbs. Broil on high until golden brown, 1 to 2 minutes.
