Chimichangas

Ingredients

  • 1/4 cup bacon grease
  • 2 cups cooked beef, pork or chicken, chopped or shredded
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 2 cans (4oz.) chopped green chiles
  • 1 boiled potato, diced and peeled
  • 1 tsp salt
  • 1 1/2 tsp dried oregano
  • 1 tsp chili powder
  • 2 tbsp minced cilantro
  • 12 tortillas

Directions

  1. In a skillet, melt bacon grease over medium heat. Saute meat, onion, garlic, tomatoes, green chiles, and potato until the onion softens. Add salt, oregano, chili powder and cilantro; simmer 2 to 3 minutes. Place 1/2 cup filling on each of 12 tortillas. Fold, envelope-style, like a burrito. Fry, seam side down, in 1/2 inch of hot oil until crispy and brown. Turn and brown other side. Drain briefly on a paper towel. Top as desired; serve immediately.
