Roasted Rainbow Carrots

Ingredients

  • 4 packages rainbow carrots, halved lengthwise
  • 4 garlic cloves, halved
  • 3 shallots, quartered
  • 1/4 cup olive oil
  • 1 tbsp kosher salt
  • 2 tsp black pepper
  • 1 tsp chopped fresh thyme
  • Garnish: fresh thyme

Directions

  1. Preheat oven to 375. Line a large rimmed baking sheet with foil.

  2. On prepared pan, toss together carrots, garlic, shallots, oil, salt, pepper, and thyme; spread in a single layer.

  3. Bake until carrots are tender, about 25 minutes. Garnish with thyme.
