shrimp and grits

Ingredients

  • 2 T oil
  • 6 slices of diced bacon
  • 1 lb medium shrimp peeled & deveined
  • 1/2 C sliced mushrooms
  • 2 cloves crushed garlic
  • 3 medium scallions--1/2 inch diagonal slices
  • 1 T fresh lemon juice
  • 1/2 t red pepper sauce
  • 1/2 t salt
  • 1/2 t pepper
  • cheese grits--recipe below

Directions

  1. Heat oil in 12" skillet, add bacon, cook until crisp

  2. Flour shrimp in bag adding about 5 at a time

  3. Increase heat to medium, add shrimp & cook about 2 minutes stirring frequently

  4. Add mushrooms and garlic—cook about 2 min

  5. Stir in scallions, lemon juice, pepper sauce, salt and pepper

  6. Cook about 1 min until scallions are heated

  7. Cheese grits:

  8. Cook 1 C quick grits using 4 C water

  9. Remove from heat

  10. Stir in 3/4 C grated cheddar, 1/4 C grated parmesan, 1/4 C butter, 1/2 t salt, 1/4 t hot red pepper sauce, 1/3 t white pepper and pinch of cayenne pepper

  11. Sprinkle with 1/4 C cheddar to serve
