Pan seared Chilean sea bass

Ingredients

  • 12 oz chilean sea bass
  • 2 T olive oil
  • 1/4 C butter
  • 1/2 T minced garlic
  • salt

Directions

  1. let fish set out for 30 min before cooking

  2. shimmer butter and garlic in small pan

  3. heat olive oil separately on medium heat

  4. pat fish dry and salt all over

  5. cook fish in olive oil

  6. strain garlic from butter and pour butter on fish
