Blackberry Coffee Cake

Not really a “Coffee Cake” in my opinion. But Darn good!

Ingredients

  • Cake -
  • 1 box butter recipe cake mix
  • 1 stick butter or margarine melted
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1/2 cup sour cream
  • Topping-
  • 2 cups fresh blackberries (I used frozen sweetened blackberries that I had frozen from our garden fence, just drained the liquid from them.)
  • 1/4 cup white granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup chopped pecans
  • -
  • Glaze: 2/3 cup powdered sugar
  • 2 to 3 tablespoons milk

Directions

  1. In a large bowl using a mixer combine the yellow cake mix, butter, eggs, milk, vanilla and sour cream.

  2. In a smaller bowl combine the blackberries, sugar, cinnamon and nuts. Gently mix together with a spoon.

  3. Spray a 10 inch bundt pan with cooking spray. Pour in the cake mix batter then gently swirl in the blackberries until covered. I use a kitchen knife to do this.

  4. Bake in a preheated 350 degrees oven for 55-60 minutes checking to make sure cake is done in center. Let cool 10 minutes and remove from cake pan.

  5. Mix the powdered sugar and milk to make the Glaze and drizzle over cake.

  6. I served with a dollop of cool whip.
