Pepper Steak

Ingredients

  • 1 lb. round steak - slice in thin strips
  • 1 tbsp. paprika
  • 2 tbsp. margarine
  • 2 cloves garlic
  • 1 1/2 c. beef broth
  • 1 c. sliced green onions - include top
  • 2 green peppers - cut in strips
  • 2 1/2 tbsp. cornstarch
  • 1/2 c. cold water
  • 1/4 c. soy sauce
  • Rice

Directions

  1. Start rice cooking.
  2. Cut steak into stripes. Sprinkle meat with paprika and allow to stand while preparing other ingredients.
  3. Use large skillet. Brown meat in margarine. Add garlic and broth. Cover and simmer up to 30 mins.
  4. Stir in onions & green peppers. Cover & cook 5 mins.
  5. Blend in cornstarch, soy sauce, & cold water. Stir thickening into meat and peppers. Stir & cook until it bubbles and becomes clear gravy,
  6. Take off heat. Add tomato wedges. Stir thoroughly.
  7. Serve over hot rice.
