Sheet Pan Steak Dinner

Ingredients

  • 24 oz. bag baby red potatoes, halved or quartered
  • 1/2 cup finely grated Parmesan
  • 4 garlic cloves, minced
  • 2 tbsp chopped fresh thyme
  • 2 tbsp unsalted butter, melted
  • 4 tsp kosher salt, divided
  • 2 1/4 tsp black pepper, divided
  • 3 New York strip steaks
  • 1 lb. French green beans, trimmed
  • 1 tbsp olive oil
  • Garnish: chopped fresh thyme

Directions

  1. Preheat oven to 425. Line a large rimmed baking sheet with parchment paper.

  2. In a large bowl, toss together potatoes, cheese, garlic, thyme, melted butter, 2 tsp salt and 1/2 tsp pepper until combined. Place in an even layer on prepared pan.

  3. Bake for 30 minutes, stirring halfway through baking. Push potatoes to one side of pan. Increase oven temp to broil.

  4. Sprinkle steaks with 1 1/2 tsp salt and 1 1/2 tsp pepper; add steaks to pan.

  5. In a large bowl, stir together green beans, oil, remaining 1/2 tsp salt and remaining 1/4 tsp pepper; add green beans to pan.

  6. Bake for 10 minutes. Turn steaks, and stir potatoes; bake until cooked to your liking, 10 to 25 minutes more, covering potatoes with foil halfway through baking to prevent excess browning. Garnish with thyme.
