Spicy Onion Bloom

Ingredients

  • 1 large Vidalia onion or other sweet onion
  • 1 cup whole buttermilk
  • 1 tsp hot sauce
  • 1 1/2 cups all-purpose flour
  • 4 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp ground red pepper
  • 2 large eggs
  • 1 tsp water
  • 1 cup panko
  • 2 tbsp mayo
  • 2 tbsp prepared horseradish
  • 2 tbsp ketchup

Directions

  1. Cut off top 1/2 inch of onion, and peel. Without slicing through root end of onion, make 12 to 16 cuts toward center, creating wedge-shaped pieces. Remove about 1 inch of onion from center and gently separate outer pieces without removing them.

  2. In a medium bowl, whisk together buttermilk and hot sauce; submerge onion in buttermilk mixture. If onion doesn’t fully submerge, gradually add ice water to buttermilk mixture until onion is fully covered. Refrigerate for 1 hour.

  3. In a large bowl, whisk together flour, salt, garlic powder, and peppers. Remove onion from buttermilk mixture, letting excess drip off. Place onion in flour mixture; place a plate over top of bowl. Shake bowl to fully coat onion in flour mixture.

  4. In another medium bowl, whisk together eggs and 1 tsp water. In a shallow dish, place panko. Dip flour-coated onion in egg mixture to coat, letting excess drip off. Roll in panko until onion is fully coated. Spray onion with cooking spray. Refrigerate 15 minutes.

  5. Preheat airfryer to 400.

  6. Spray onion with cooking spray and place in air fryer basket. Set temp to 400 and cook for 5 minutes. Turn onion; spray with cooking spray. Cook until golden brown, about 3 minutes.

  7. In a small bowl, stir together mayo, horseradish, and ketchup. Serve sauce with onion.
