Colorful Coleslaw

Ingredients

  • 1/2 head green cabbage, thinly sliced
  • 1/2 head red cabbage, thinly sliced
  • 3 mini sweet peppers, thinly sliced
  • 2 carrots, shredded
  • 1/2 cup mayo
  • 1/2 cup milk
  • 1 tbsp sugar
  • 1 tsp white vinegar
  • Kosher salt
  • Couple dashes of hot sauce
  • 2 cups fresh cilantro

Directions

  1. Combine the green cabbage, red cabbage, sweet peppers and carrots in a large bowl.

  2. In a separate bowl, mix the mayo, milk, sugar, vinegar, 1/4 tsp salt and the hot sauce. Pour over the cabbage. Toss to combine. Add the cilantro at the very end. Cover and refrigerate for 2 hours. Taste, season again generously and serve.
