Jalapeno-Cheese Grits

Ingredients

  • 2 cups water
  • 1/2 cup quick-cooking grits
  • 1/2 tsp garlic powder
  • 3/8 tsp salt
  • Topping:
  • 1 tbsp finely chopped parsley
  • 1 1/2 oz. shredded sharp cheddar
  • 1 medium jalapeno, seeded and finely chopped
  • 1/4 cup diced tomatoes

Directions

  1. Combine water, grits and garlic powder in a medium saucepan; bring to a boil over high heat. Reduce heat, cover and simmer 5 minutes or until thickened. Remove from heat and stir in salt. Top with parsley, cheddar, tomatoes and jalapeno.
