Crispy Southwestern Chicken Cutlets

  • 2 chicken cutlets
  • 1/2 panko
  • 1/4 c monterey jack cheese
  • 1/2 tsp chili powder
  • 1 tsp southwest spice
  • salt and pepper
  • olive oil
  • 4 tbls sour cream
  • 1 tsp hot sauce


  1. Preheat 425 degrees

  2. pat chicken dry with paper towels; season with salt and pepper.

  3. Evenly brush tops of chicken with the sour cream

  4. In a medium bowl, combine panko, Monterey Jack, a drizzle of olive oil, chili powder, 1 tsp Southwest Spice, salt, and pepper.

  5. Mound panko mixture onto brushed sides, pressing firmly to adhere.

  6. Drizzle each piece of coated chicken with oil.

  7. Roast in pan 15-18 min

  8. serve with hot sauce on top is desired
