Cheesecake Cookies

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 4 oz cream cheese, softened
  • 1/2 cup swerve (or equivalent granular sweetener)
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 tsp stevia extract
  • 1 cup strawberries, chopped
  • 1/2 cup blueberries


  1. Preheat oven to 325F; line baking sheet(s) with parchment paper

  2. In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt

  3. In a large bowl, beat cream cheese and butter together with sweetener until light and fluffy; beat in egg, vanilla, and setvia until smooth

  4. Add almond flour mixture in two additions, scraping down bowl as needed; carefully fold in berries until mixed

  5. Roll into 1-in balls and place on prepared baking sheets; gently flatten balls to be about 1/2-in thick

  6. Bake 15-20 min until just firm to the touch and barely beginning to brown

  7. Remove and cool on pans
