Pete’s Appetizer Wraps

A tasty appetizer that can double as a light lunch or supper.

Serves 8 people

Ingredients

  • 4 oz unsalted butter at room temperature
  • 8 oz cream cheese at room temperature
  • 3 cloves garlic - finely minced
  • 1/4 C basil leaves - finely minced - or
  • 2 t. dried basil
  • 2 T green onions or chive - snipped
  • 8 10" flour tortillas
  • 8 leaves romaine lettuce, stems removed
  • 1 medium cucumber, peeled, seeded and cut in 1/4" julienne
  • 1 green pepper cut in 1/4" julienne
  • 3 medium tomatoes sliced very thin
  • 8 oz prosciutto or cappicola
  • seasoned salt

Directions

  1. Cream butter, cream cheese, garlic, basil, and onions together.

  2. Spread butter/cheese mixture over tortillas, covering about 2/3’s of each.

  3. Put 1 lettuce leaf on buttered portion of each tortilla.

  4. Divide tomato slices, cucumbers, peppers, cold cuts and spread over the lettuce.

  5. Sprinkle with seasoned salt and pepper to taste.

  6. Roll up, fasten with toothpicks, and refrigerate overnight.

  7. When ready to serve, slice into 1" pieces.
