Mexican Casserole

vintage recipe from Doritos. I have found that the Simply Tostitos, 8 1/4 oz bag works great. Also, I found some recipes like this that had sour cream. I am adding it as well as optional.

Ingredients

  • 1 lb of ground turkey or chicken (cooked) or shredded chicken
  • 1/2 lb of shredded cheese, a mix of medium cheddar and Jack cheeses
  • 7 1/4 oz bag of plain Doritos
  • 1 can Rotel (opt 2 cans)
  • 1 12oz can evaporated milk
  • 1/2 stick of butter
  • 1 small onion, chopped
  • 1 can cream of chicken soup
  • optional: 1/2 C sour cream (found this in other recipes that are similar)

Directions

  1. Brown meat, drain, set aside.

  2. Preheat oven to 350 degrees and grease/spray a 9×13 baking dish.

  3. In a medium sauce pan combine Rotel, milk and the soup. Stir and heat on medium heat until combined and hot.

  4. Crush chips in the bag or in a bowl.

  5. Layer in the 9×13 dish in this order: Chips, meat, sauce, cheese. Do this twice.

  6. Bake at 350 degrees for about 30 minutes.
