Boston Market Sweet Potato Casserole

Ingredients

  • Potatoes:
  • 3 large sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1 stick butter, softened
  • Crunch Topping:
  • 1 tsp vanilla extract
  • 1/3 cup melted butter
  • 1/3 cup flour
  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1 tbsp cinnamon

Directions

  1. eheat the oven to 350.

  2. Boil potatoes for 12 to 15 minutes until tender. Remove skins when cooled. Put into a large bowl.

  3. Add the sugar, eggs, and butter and whip until fluffy.

  4. Pour the mixture into a greased casserole dish.

  5. In a separate bowl, combine all the ingredients for the crunch topping. Add to the top of the casserole.

  6. Bake for 45 minutes.
