Blender Hollandaise

Ingredients

  • 3 egg yolks
  • 1/4 teaspoon Dijon mustard
  • 1 tablespoon lemon juice (or less)
  • 1 dash hot pepper sauce like Tabasco
  • 1/2 cup butter (or less), melted;

Directions

  1. Combine egg yolks, mustard, lemon juice, and hot pepper sauce in blender container; cover and blend for about 5 seconds.

  2. Melt the butter. Set blender on high speed and pour hot butter into egg mixture in a thin stream. Keep sauce warm until serving by placing blender container in hot tap water.
