Chicken Con Queso

Ingredients

  • 1 Tablespoon Olive Oil
  • 3 Large chicken breast/cubed
  • 1 Packet of Taco seasoning
  • 1 1/2 Tablespoon water
  • 1 Cup heavy cream
  • 2 Cups instant white rice
  • 1 Cup premade queso
  • 1 Cup salsa
  • 1/4 Cup chopped cilantro
  • 1 Small Can green chiles
  • 1/2 Cup chopped tomatoes or pico
  • 1 Cup mexican cheese

Directions

  1. Heat the chicken cubes and olive oil over medium heat.

  2. Sprinkle chicken with taco seasoning and turn as they cook. Add 1/2 tablespoon water to help coat.

  3. Cook chicken until just done.

  4. Place chicken on a plate and cover with foil.

  5. In same skillet, add heavy cream and white rice mixture and stir to combine.

  6. Add in the melted queso and salsa and stir to combine.

  7. Bring to a boil, then cover and reduce to a simmer for 5 mins or until rice is tender.

  8. Stir in celantro, green chiles, and pico in to rice mixture.

  9. Add chicken back to skillet and nestle into the rice.

  10. Cover with 1 cup of shredded cheese and cover skillet until melted.

  11. Garnish with cilantro.
