Ingredients

  • 6 strips bacon
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 ounces cream cheese
  • Minced parsley to sprinkle on top (optional)

Directions

  1. Preheat oven to 375 degrees F., rack in the middle position.

  2. Fry the bacon in a frying pan on the stove top until it’s crispy. Let it cool to room temperature, and then crumble it into the bottom of your baking pan.

  3. In an electric mixer, beat the eggs with half of the milk (that’s 1/2 cup). Continue to beat until the mixture is light and fluffy.

  4. Add the vanilla extract and salt. Beat until they’re well combined. Mix in the flour and beat for 40 seconds.

  5. Add the second half of the milk (another 1/2 cup) and beat until everything is light and fluffy.

  6. Pour half of the mixture over the bacon crumbles in the 8-inch square pan.

  7. Cut the cream cheese into 1-inch-square cubes. Place them evenly over the egg mixture in the pan.

  8. Pour the second half of the mixture over the cream cheese.

  9. Bake at 375 degrees F. for 45 to 55 minutes, or until it’s golden brown and puffy on top.
