Chocolate-Coffee Brownies

Ingredients

  • Vegetable oil spray
  • 2 cups sugar
  • 15 tbl unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 3 tbl finely ground dark roast coffee beans
  • 1/2 tsp salt
  • 3 large eggs
  • 1 1/2 tsp vanilla
  • 1 1/4 cups flour
  • 3/4 cup pecan pieces
  • 1 cup bittersweet chocolate chips (6oz)
  • 6 tbl. freshly brewed strong coffee

Directions

  1. Preheat oven to 350F. Spray 13×9×2 inch metal pan with spray.

  2. Combine sugar, butter, cocoa, ground coffee, and salt in large metal bowl. Place bowl over saucepan of simmering water and whisk until butter melts and ingredientss are blended (texture will be grainy).

  3. Remove bowl from over water, cool mixture to lukewarm. Whisk in eggs and vanilla.

  4. Sift flour over and fold in. Mix in pecans.

  5. Spread batter in prepared pan. Bake brownies until tester comes out clean, about 25 minutes.

  6. Cool brownies in pan.

  7. Place chocolate chips in small bowl. Bring brewed coffee to simmer in small saucepan; pour over chips and stir until melted and smooth.

  8. Let ganache stand until cool and begnning to thicken, about 1 hour.

  9. spread evenly over brownies.
