Green Goddess Dressing

Ingredients

  • 1 1/4 cups fresh watercress (or baby spinach)
  • 3/4 cup fresh parsley
  • 1/4 cup chopped fresh chervil (or more parsley)
  • 1/4 cup chopped fresh tarragon
  • 3 tbsp. roughly chopped fresh chives
  • 2 tsp capers
  • 1 small garlic clove
  • 1/2 small shallot
  • Pinch of sugar
  • 2 tbsp. fresh lemon juice
  • 4 tsp white wine vinegar
  • 1 1/2 tsp Dijon
  • 1 1/2 tsp Worcestershire
  • 1 cup mayo
  • Kosher salt and black pepper

Directions

  1. Combine the watercress, parsley, chervil, tarragon, chives, capers, garlic, shallot and sugar in a blender or food processor.

  2. Add the lemon juice, vinegar, mustard, Worcestershire and mayo and puree until pale green and very smooth. Season with salt and pepper as needed.
