Green Goddess Orzo Salad

Ingredients

  • Green Goddess Dressing (see recipe)
  • Dill
  • 1 tsp grated lemon zest
  • 1/4 cup sour cream
  • 8 oz. cooked orzo
  • 3/4 cup cooked frozen peas
  • 6 oz. chopped marinated artichoke hearts
  • 1/2 bunch thinly sliced asparagus
  • 1 1/2 cups thinly sliced snap peas
  • Pepper
  • 1/4 cup torn dill

Directions

  1. Make Green Goddess Dressing, replacing the chervil with dill. Omit the Worcestershire and add lemon zest instead. Reduce the mayo to 3/4 cup and add sour cream.

  2. Combine orzo, peas, artichokes, asparagus, and peas in a bowl; toss with 1 cup of the dressing. Season with pepper. Refrigerate 20 minutes. Add more dressing as needed; toss with dill. Season with salt and pepper.
