BLT Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • 1 tbsp. sugar
  • 1 cup milk
  • 1/2 cup mayo
  • 3/4 cup crumbled cooked bacon
  • 1/2 cup chopped seeded plum tomatoes
  • 2 tbsp. minced fresh parsley
  • Shredded lettuce

Directions

  1. Preheat oven to 400. In a large bowl, combine the flour, baking powder and sugar. In a small bowl, whisk milk and mayo until smooth. Stir into dry ingredients just until moistened. Fold in bacon, tomatoes and parsley.

  2. Fill 12 greased or paper-lined muffin cups two-thirds full. Bake until a toothpick comes out clean, 20 to 25 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Top with lettuce.
