Coconut Pork Curry

  • 1 cup basmati rice
  • 1 1/4 lb. lean pork, cut into cubes
  • 1/4 tsp salt
  • 1 tbsp. vegetable oil
  • 1 1/2 cups sliced bell peppers (any color)
  • 2 cups sugar snap peas
  • 16 oz. jar Thai-style yellow coconut curry stir-fry sauce


  1. Cook basmati rice as directed.

  2. Meanwhile, sprinkle pork with salt. Heat oil in a large saucepan over high heat. Add pork to pan; cook until completely browned, about 5 minutes. Remove from pan.

  3. Saute peppers and sugar snap peas in saucepan until softened, 1 to 2 minutes. Return pork to pan.

  4. Add stir-fry sauce and bring to a simmer. Cook, stirring occasionally, 5 to 10 minutes, until cooked through.
