Ingredients
- 12 Hard boiled eggs.
- 1 large avocado
- 1 cup Mayo
- 1/3 cup yellow mustard
- juice of 1/2 lemon
- Season to taste with salt and pepper
- You add a drop of food coloring
Directions

Crack eggs and put them in a plastic bag. Pour over water with food coloring. Let them sit a bit, then peel. Cut in half and put yolks in a food processor with avocado, mayo, mustard and blend til smooth.

Pipe into shells.
