Blueberry Tart

Ingredients

  • 1 stick of butter, softened
  • 1/2 t vanilla
  • 1 t baking powder
  • 1 C sugar
  • 1 C flour
  • 2 eggs
  • 1/2 t salt
  • 2 C blueberries
  • 1 t lemon juice
  • Note: with self rising flour eliminate baking powder and salt

Directions

  1. Preheat oven to 350F

  2. Spray 9" round baking pan & dust lightly with flour

  3. Beat butter, sugar & vanilla until light & fluffy

  4. Add eggs & beat well

  5. Reduce speed to low & add 1C flour-beat until smooth

  6. Pour batter into baking pan

  7. Mix blueberries, 1t flour & lemon juice

  8. Spoon mixture over batter

  9. Bake 50 min or until pick in center comes out clean

  10. Cool 10 min

  11. Option: dust with powdered sugar
