Pesto Fried Chicken

Ingredients

  • 3 1/2 lb. chicken
  • 1 cup milk
  • 1/2 cup Basic Pesto (see recipe)
  • 3 cups flour
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • Vegetable oil, for frying

Directions

  1. Cut chicken into 8 pieces. Whisk together milk and pesto; add the chicken and soak 30 minutes. Remove the chicken and dredge in flour mixed with paprika, kosher salt and pepper. Deep-fry in 350 vegetable oil until golden, 12-15 minutes.
