Pesto Tomato Soup

Ingredients

  • 3/4 cup shallots, chopped
  • Fresh thyme
  • Butter
  • 28 oz. can crushed tomatoes
  • 1 1/2 cups water
  • 1/2 cup heavy cream
  • 3 tbsp. Basic Pesto (see recipe)
  • Salt

Directions

  1. Cook shallots and some fresh thyme in a pot with butter. Add crushed tomatoes, water and heavy cream; simmer 20 minutes. Puree, then stir in pesto. Season with salt.
